Kerala Tomato Chutney - Quick and Easy Way to Prepare - by Indira CookHouse

When we need to make a curry quickly or when we have guests at home unexpectedly, we can make this easy and quick tomato chutney.

Ingredients:

Tomatoes - 2, chopped Red Onion(Big) - 1, cut length wise Green Chilly - 4 Curry Leaves - 1 Sprig Ginger - 7 ,1 inch pieces Yogurt/Curd - 4 tbsp Turmeric Powder - A pinch Coconut Oil - 3 tbsp Salt to taste Mustard seeds - 1 tsp
Light the stove and keep the pan on the stove. Add coconut oil/cooking oil to the pan. Once the oil is hot, add a teaspoon of mustard seeds. When the mustard seeds start to splutter, add the chopped ginger, 4 green chillies (slit lengthwise), one big onion cut lengthwise and saute till the onions become transparent. To this, now add the tomatoes, a sprig of curry leaves, a pinch of turmeric powder and required salt and saute for a minute.Cover with a lid and cook for a minute. Switch off the stove and allow the mix to cook in the heat. Cover the pan with a lid and wait for some time to allow the mix to cool. Open the lid, stir the mix and check if it has cooled. After the mix has cooled, add about 4 tablespoons of curd and mix. Now transfer to a serving bowl. Tasty tomato chutney is now ready. This tomato chutney tastes superb with rice and papad.
